Mushroom Chutney



Mushroom Chutney

This is my Daughter's Recipe. She has lot of food allergies and she has lot of limitations. She is not allergic to mushrooms, but she just dosen't like to eat Mushrooms in any form, however you cook them, she just won't eat. Then one fine evening, she came up to me, and she asked me try mushroom chutney for her, she thought of this recipe and I tried it for her, and guess what, VIOLA....she eats mushrooms now, but only in the form of mushroom chutney....
I just added some extra ingredients in it later for my hubby.

So here is Meha's famous Mushroom Chutney Recipe:

1 cup of chopped Mushrooms (the small white ones are really good and earthy).
1 small chopped onion
1/2 chopped tomato (small)
1 tsp. Cumin seeds(dry Roasted)
1 and 1/2 tsp. Coriander powder
1 tsp. Urad dal (dry roasted)
1 tsp. Dalia (roasted channa dal)
2-3 curry leaves
1 tsp. roasted peppercorns
Salt to taste

Tempering:

2-3 tsp. oil
pinch Hing
1 tsp. mustard seeds
1 tsp. cumin seeds
1 tsp. Urad dal
cury leaves
Red chilli flakes


Procedure:

Fry the chopped mushrooms, onions and tomato in 2 tsp. oil. Then blend it finely with Cumin seeds, Urad dal, dalia, curry leaves and peppercorns. Add salt as per taste.
then temper the chutney. Add water as per the thickness you want for the chutney. It goes very well with plain hot white Rice ans ghee on it or you could have it with Idli.

Chiku Kulfi


Chiku Kulfi

Ingredients

1 can of condensed milk
Vit D Milk 500 ml.
1 packet of frozen Sapota/chiku
8 oz. of Whipped topping/whipping Cream

Procedure:

Boil the 500ml. Vit D (full fat milk), for over an hour, on low flame till it thickens up. Once it is cool, add the chiku pieces, and blend it.(keep the frozen packet of Sapota for thawing 1/2 an hour before blending).
Next, add 8 oz. of whipped topping or u can add heavy whipping cream (1 pint -11/2 pint). Blend it thoroughly. Then, gradually add 1/2 a can of the condensed milk, blend it, taste the prepared mixture, if it is still not sweet enough, add some more condensed milk till it reaches the sweetness of the Kulfi/Ice cream. After thoroughly blending it, freeze it for 3 hrs., again, blend it, and re-freeze it, till the Kulfi or Ice-cream is formed.

Blending it after 3 hrs., makes the Ice-cream more creamier, but again its optional, you can always pass on it.

Please Note: You can always add sugar while boiling the milk and avoid the condensed milk completely.

In the same manner, you can make malai Kulfi, mango kulfi and Pista kulfi....

Soup for Health and Diet

This is my Hubby's favourite soup....

Green Soup

2 cups of Green Peas
1 bunch of Spinach
1 cup of chopped coriander leaves
1/2 onion
2 tbsp. oil
2 tsp. of garlic powder
2 tsp. of black pepper powder
salt
1 slice of American cheese

Boil the first 4 ingredients and blend it into a puree. Heat 2 tbsp. oil in a pan, add the blended puree, add to it 2 tsp. of Garlic powder(if using fresh garlic, fry it in oil, before adding the puree),
then add salt to taste and black pepper powder, boil it till it reaches a thick consistency of the soup. Add cheese, stir it till the cheese melts, turn off the heat. The Soup is ready to be served.
